 Known as the gateway to Baja’s wine country, Tecate combines traditional Mexican flavors with an artisanal, small-town vibe.   Tecate is famous for its traditional bread, or pan dulce. Local bakeries produce a variety of freshly baked goods, from conchas to bolillos, that draw both locals and visitors.

Valle de Guadalupe, often referred to as the "Napa Valley of Mexico," is a culinary and wine destination that has gained international acclaim.

 Most restaurants in the Valle embrace a farm-to-table approach, using ingredients sourced directly from local farms and gardens.  This focus on sustainability ensures that dishes are as fresh as they are flavorful.

BAJA is the birthplace of the Caesar Salad

 

The Caesar salad, a globally beloved dish, was invented in Baja California, Mexico, specifically in Tijuana. Here’s the story behind its origin:

  • Who Created It?  The salad was created by Italian-American chef Caesar Cardini, who owned a restaurant in Tijuana during the Prohibition era in the 1920s.
  • The Birth of a Classic  Legend has it that on July 4, 1924, Cardini had limited ingredients in his kitchen due to an unusually busy day. To improvise, he threw together a simple salad using the ingredients he had on hand: romaine lettuce, olive oil, garlic, Worcestershire sauce, lemon juice, egg, Parmesan cheese, and croutons.
